Summer time equals bikini time, right? I’m going to say what we are all thinking…how can I look good in my bikini by the time summer rolls around? I am going to share with you some of my favorite healthy eating trends, from one surfer girl to the next.
Let’s be honest, who doesn’t love an Instagram pic worthy smoothie bowl. The one that screams “I’m so healthy I have to post this on social media.” Not only does it make a great picture, but it really is a filling and healthy option for pre-surf sessions. Smoothie bowls are such a fun and playful option for a healthy and quick breakfast; it is one of my favorite go-to’s.
Overnight Oats / Warm Oats
Oats are an epic source of fiber and ever so filling. It is a great option for a fast and healthy meal. To make it even easier for early morning, you can use a mason jar with oats, various toppings and almond milk, leave it over night in the fridge and grab it and go first thing in the morning. If you have time, warm your oats and healthy toppings up on the stove or microwave and enjoy. Both options are so easy and so satisfying.
Toast Topped with Goodies
This healthy option is a great idea for breakfast or a snack, any time of the day. You can make many toast and topping options to fit your mood and keep your healthy kick alive. Some options for multigrain toast an toppings include:
- Avocado and “fried” egg (try coconut oil when frying your egg)
- Peanut butter & banana (try a sprinkle of sea salt to taste)
- Smashed berries and chia seeds
Enjoy a satisfying bowl of delicious Mexican inspired goodies. I like to add brown rice, cabbage, corn, black beans, fresh guacamole and fresh salsa and a sprinkle of sharp cheddar cheese. Squeeze a lime to finish it off. You will be surprised at how simple it it to throw all these ingredients in a bowl and just how delicious it tastes.
Veggie or Bean Burger with Sweet Potato Fries
Don’t feel like you have to skip out on burgers for the summer body you imagined. There are so many options to choose from… try a veggie burger, a turkey burger or a black bean burger. All are so delicious and can be topped with the typical lettuce, tomato combo. Then why not make some homemade sweet potato fries, tossed in a touch of olive oil and crisped to perfection in the oven.
